Sunday is slowly becoming my favourite day. A day of guilt free lazing, a tasty brunch and good coffee. As an egg addict – I’m always on the look out for new breakfast / brunch recipes. I spotted this one for Baked Avocado Eggs on Pinterest sometime ago, and bookmarked it straight away. I finally gave it a whirl this morning. It’s quick and easy to make. The hardest part is getting the egg to fit the avocado. If in doubt, I’d say scoop out a little extra. Better to have the egg sit a little more swallow in the avocado, than overspill. It’s been a while since I posted a dessert recipe on the blog and surprisingly, even to myself. I didn’t go with my usual favourite – anything of the chocolate variety! Instead I went for this Mixed Berry Pavlova and it went down a treat. It’s nice and light. Living in Canada I come across little things that differ from home all the time, pancakes are one of these such things. At home our pancakes are thin and flat more like a crepe really, and over here they are thick and fluffy with the addition of baking soda. Buttermilk pancakes were also new to me and I finally tried making them myself using this recipe a few weeks ago, simple to make and they make the perfect breakfast or pancake tuesday treat.
However as delicious as they were this Pancake Tuesday I’m going to stick with the old traditional recipe, you can catch (here) from my post 2yrs ago when I mixed up the days and had Pancake Thursday instead!
