The past few weeks I’ve been in a Mexico state of mind. My Instagram feed is one culprit for my current wanderlust. Scroll by scroll, it’s been one beautiful Mexican beach after another. Perfect little squares of white sandy beaches with warm turquoise water. Some accompanied with a token fruity cocktail, others with glamorous sunglasses and straw hats. None lack the best accessory of them all – glorious summer sunshine! The fact that Toronto has been sprinkled with snow and then glazed with -24 temperatures, certainly is the main driving force! So we are going to take advantage of Canada’s close proximity and head south! Riviera Mayan / Tulum to be a little more specific. While relaxation is top of the list (with token cocktail in hand!), myself and my hubby do like to explore the sights. The ruins, centoes and snorkelling with turtles are on the top of my list. Sunday is slowly becoming my favourite day. A day of guilt free lazing, a tasty brunch and good coffee. As an egg addict – I’m always on the look out for new breakfast / brunch recipes. I spotted this one for Baked Avocado Eggs on Pinterest sometime ago, and bookmarked it straight away. I finally gave it a whirl this morning. It’s quick and easy to make. The hardest part is getting the egg to fit the avocado. If in doubt, I’d say scoop out a little extra. Better to have the egg sit a little more swallow in the avocado, than overspill. This is definitely a recipe you can play around with and add different toppings to. I used sriracha sauce on mine, a little chilli goes so good with avocado. Continue reading

Next up on my Instagram accounts to follow, is one of my favourite Irish fashion bloggers, Anouska Proetta Brandon. Based in Dublin, Anouska’s Instagram feed gives me a little taste of home each day. Even if, sometimes home is unrecognisable, her amazing eye manages to transform inanimate objects into artwork. Just check out some of her shots of grey concrete buildings!
Lucky for us she shares photography duties with her boyfriend Ronan. So we get to see this lovely lady in front of the lens too. And when you do, you should definitely take note! Her outfit photos are styled to an editorial perfection. Anouska describes her style in Teen Vogue as “eclectic, with an edge”.
